Allergens and additives — where they are listed
Fourteen allergen groups must be declared in food service (Annex II of the EU Food Information Regulation), additives under § 5 of the German Food Additives Implementation Regulation (LMZDV). With us, both are where you order: on every dish's page — ingredients, allergens, optional extras, possible traces, additives.
Cereals containing gluten, Eggs, Soybeans, Milk, Nuts, Celery, Mustard and Lupin occur in our recipes or as possible traces. The remaining groups — Crustaceans, Fish, Peanuts, Sesame seeds, Sulphur dioxide and sulphites and Molluscs — appear in no recipe and no trace note.
We do not use additives in what we make ourselves; preserving happens at minus eighteen degrees. Where bought-in components bring some along, the class and substance are on the dish and the side — today Preservatives, Acids, Stabilisers, Acidity regulators, Antioxidants and Flavour enhancers.
