What vegetarian means

No meat, no fish. Milk, egg and honey are allowed.

It gets more precise when you split it up. Ovo-lacto-vegetarian is the most common form: milk and egg yes, meat and fish no. Lacto-vegetarian also leaves out egg, ovo-vegetarian leaves out milk. And pescetarian, strictly speaking, isn't a vegetarian diet, because fish is part of it.

For our menu that means: everything we mark as vegetarian is ovo-lacto-vegetarian. If you look at egg or milk separately, the information is on the dish.

What Turkish cooking has to do with it

Turkish cooking has a category of its own for dishes without meat. Its name is zeytinyağlı — "with olive oil".

Behind it stands no declaration of doing without, but a method of its own: cooked in olive oil instead of butter, eaten cold or lukewarm instead of hot, often prepared the day before, because these dishes get better overnight. Stuffed vine leaves belong to it, stuffed peppers, green beans, artichokes, leeks.

The difference from the European view is the order. Here, a dish stands on the menu and next to it a version without meat. There, there's a category of its own with its own rules, and it stands as an equal beside everything else.

Our Green Rolls are such a dish. Vine leaves with rice, tomato paste and spices — never conceived with meat, but this way from the start.

Where the difference from vegan lies

Everything vegan is vegetarian, not the other way round. With us the difference lies in egg and milk: in the dough of one kind, in the filling of several, in two of the salads. What's in what is on the dish — and if you eat vegan, you'll find the right selection on the page for it.

The dish we'd start with

Melted Heart. Shepherd's cheese in a flower shape, walnut and parsley on top, no yogurt and no sauce — the cheese carries the dish alone.

It's the only kind we fold as a flower, and the only one with egg in the dough. The way of serving comes from Sinop on the Black Sea: walnut on top and hot melted butter that runs into the folds of the flower and makes the walnut more aromatic.

Where we don't play along

A dish filled with meat doesn't become vegetarian by leaving the meat out. We don't offer any kind in two versions — each is what it is, and stands there with its marking.

And we work with meat in the same facility. What we separate, we separate consistently: separate production runs per kind, machine cleaning in between, two fryers. How that works is explained in more detail on the page on vegan eating — the same procedures apply there.
